This cake is bursting with sweet lychee flavor! Dehydrated lychee is incorporated into the sable cookie at the bottom, as well as the mousse layer. A layer of apricot gelee and vanilla bean sponge cake in the middle balances the sweetness of the lychee cookie and mousse, creating the perfect cake for summer!
